Oatmeal Bites

For a quick and easy snack, try one of these oatmeal bites. Choose your favorite from Peanut Crunch, Chocolate Chip, or Blueberry Muffin. Or if you can’t decide, make them all!

Snacks. Sometimes I feel they are the bane of my existence. I put a lot of effort into planning out healthy meals for my family, and I don’t have much effort left for snacks. But snacks are an important part of the day for kids and adults alike! We need them to be convenient, but we want them to be healthy too. It seems you usually have to pick one. So if you are tired of resorting to the typical go-to’s of chips, crackers and fruit snacks, these recipes are for you!

These oatmeal bites fit the bill for both healthy AND convenient. They are made with whole grain oats and nut butters. Keep these on hand and you’ve got a treat everyone will love, and a clear conscience knowing your are providing plenty of fiber, protein and vitamins for them as well.

The oatmeal bites are so easy to make—no baking required. They store well in the fridge, and one batch makes 16 balls, so you’ve got convenience too.

The ingredients list is simple—you probably have most everything you need in your house right now. For the best texture, use a combination of old fashioned oats and quick oats. This is still 100% whole grain. The “sticky” part of these recipes is the honey and the nut butter. Peanut butter works great, but I recommend almond butter for the blueberry muffin recipe since it has a more mild flavor. Add a pinch of salt, and which ever mix-ins you have chosen. Stir it up well, than portion using a small cookie scoop (#50 size works great). Roll into a ball with your hands, making certain to compact it together for a good hold. You can eat them immediately, or stick them in a fridge to firm up a little. Store on wax paper in a container with a lid.

My kids LOVE these bites, especially my 1 year old. His favorite is the chocolate chip, of course. Word of caution though—these are made with honey so they are not a good choice for infants under a year old.

Honestly, you will love these bites! They are an excellent for breakfast as well! I love to pair them with eggs or yogurt. It's quick nutrition on the go, without lots of added sugars like your typical granola bars and such.

Peanut Crunch Oatmeal Bites

Serving size: 1 ball

Servings per Recipe: 16

Ingredients

  • ½ cup old fashioned oatmeal

  • ½ cup quick oats

  • ¼ cup creamy peanut butter

  • ¼ cup honey

  • Pinch of salt

  • 1/3 cup peanuts (coarsely chopped)

Directions

  1. Combine all ingredients in a medium size bowl. Stir until well combined.

  2. Use a small cookie scoop (#50 size) to divide into 16 portions. Roll each portion in your hands to make it a compact ball.

  3. Serve immediately or refrigerate in a container with a lid. Can also freeze for longer storage.

 

Chocolate Chip Oatmeal Bites

Serving size: 1 ball

Servings per Recipe: 16

Ingredients

  • ½ cup old fashioned oatmeal

  • ½ cup quick oats

  • ¼ cup creamy peanut butter

  • ¼ cup honey

  • Pinch of salt

  • 1/3 cup mini chocolate chips

Directions

  1. Combine all ingredients in a medium size bowl. Stir until well combined.

  2. Use a small cookie scoop (#50 size) to divide into 16 portions. Roll each portion in your hands to make it a compact ball.

  3. Serve immediately or refrigerate in a container with a lid. Can also freeze for longer storage.

 

Blueberry Muffin Oatmeal Bites

Serving size: 1 ball

Servings per Recipe: 16

Ingredients

  • ½ cup old fashioned oatmeal

  • ½ cup quick oats

  • ¼ cup creamy almond butter

  • ¼ cup honey

  • Pinch of salt

  • 1/3 cup dried blueberries

  • ¼ tsp cinnamon

  • ½ tsp vanilla

Directions

  1. Combine all ingredients in a medium size bowl. Stir until well combined.

  2. Use a small cookie scoop (#50 size) to divide into 16 portions. Roll each portion in your hands to make it a compact ball.

  3. Serve immediately or refrigerate in a container with a lid. Can also freeze for longer storage.
