Raspberry Lime Sorbet

For an intensely flavorful, deeply colorful dessert, you have got to try this Raspberry Lime Sorbet! It’s very simple—only 4 ingredients, and it tastes incredible!

I have a raspberry forest in my backyard, and it is prolific! We inherited it when we bought the house years and years ago, and it has been a very low-maintenance source of delicious joy every summer!

All the neighborhood friends enjoy the raspberries, and I still have more than I can handle in the freezer. I usually make jam (also amazing!), and sometimes my husband likes to make fresh Raspberry Lemonade—so much better than stuff from a can! But once in a while, I make this fancy little sorbet for a sweet treat!

It’s very simple—raspberries, water, sugar and lime juice. Add lime zest if you want for a little extra lime appeal. The trickiest part is straining all the seeds out after processing it in the blender. But all you need is a wire mesh strainer, and that is pretty easy too.

I love this combination because the raspberries are sweet, and a little tart. The lime accentuates the tartness, and the sugar softens it. But I love this blend because it’s not overpoweringly sweet. Give it a try and see what you think!

Serving size: 1/3 cup (2 #24 scoops)

Ingredients
- 1 ½ cups water 
- 1 cup sugar (scant) 
- 2 Tbsp lime juice 
- 6 cups frozen raspberries 
- 2 tsp lime zest 
Directions
- Combine water and sugar in a medium pot, and bring to a boil. Stir to dissolve the sugar. 
- Add the lime juice and the frozen raspberries. Stir to combine. Pour into a high-powered blender and blend until smooth. 
- Pour the raspberry mixture through a wire-mesh strainer to remove the seeds. Transfer to a freezer safe container. Add the lime zest to the mixture and stir to combine. 
- Cover and freeze for about 4 hours. Then break up the mixture with a spoon and whip with an electric hand beater. This breaks up the ice chunks so that you can scoop it out easily. Return to container, cover and freeze for about 2 more hours. Serve chilled.
