Of all nights of the week, Sunday dinner comes with the most pressure to be stellar. It's usually the night that every body is home and sitting around the dinner table. Often you have extra family and friends gathering to eat with you, so it is a good day to make a "show-off" meal.
We have church in the afternoon, which means my fabulous Sunday dinners must also be quick and easy. I found this recipe on Deals to Meals, and decided to give it a try. I had to modify the recipe a bit because I was missing a few of the ingredients. But the end result was still delicious.
The wrap consists of:
Chicken (frozen chicken breasts cooked in the crockpot in the morning, and shredded after church).
Chipotle pepper cream cheese spread (prepped before church, and kept in the fridge)
Cheese
Fresh veggies of your choice—I happened to have bell peppers and cherry tomatoes. Also avocado, spinach, cucumber and sprouts would be delicious.
I was raised in Arizona, which means at least 75% of my home-grown recipes are Mexican food. So I do love a bit of kick on my dinner plate. However I have littles who do not appreciate the fire of chopped chipotle peppers in adobo sauce dancing on their tongue. So I made a quick kid-friendly variation of the meal.
Kid version consists of plain cream cheese, sprinkle of cheddar cheese, and chicken wrapped in the tortilla. Fresh veggies served on the side, with a little ranch to entice them to dip and try something new!
Add a side of baked sweet potato fries, and there you have my stellar Sunday dinner meal.

Chipotle Chicken Avocado Wraps
Ingredients:
CHIPOTLE SPREAD:
8 oz. cream cheese, softened
2 chipotle pepper in adobo sauce, chopped fine
Juice of 1 lime
2 Tbs. plain yogurt
1/2 tsp. salt
1/4 tsp. black pepper
WRAP:
1 pkg. flour tortillas
3-4 cups cooked chicken or turkey
1 avocado, diced
1 small red bell peppers
Spinach or lettuce, torn
2 tomatoes, sliced
6-7 sliced cheese (pepperjack, colby, etc.)
Calorie Smart Tips:
Not all tortillas are made the same. Many have 200+ calories per tortilla. Pick a brand that has 100-130 calories a piece. They are still a good size and you and your family will be none-the-wiser.
Eliminate the cheese and save yourself 50 calories per wrap
