This one is fun and easy to make, and the result is brilliant. My 3 year old wanted a Care Bear Rainbow birthday party this year, so Rainbow Rice Krispies was the perfect party treat.
Rainbow versions of cake and Jello take a LONG time to put together because each layer has to be mixed and baked or set separately. However with rice krispies, you can start the next layer immediately. I think it took a total of 30 minutes to put this together from start to finish.
To make it a little fancier, I topped it with vanilla almond bark, and sprinkles. I definitely recommend this one for your next party. It’s kid friendly, and it doesn’t make too much of a mess—which is a very nice feature when you are feeding a pack of 3 year olds.
Another bonus feature of a Rice Krispie treat cake is that it is actually moderate on calories. This one comes in at less than 200 calories per serving, compared to cake, brownies or pie where you are easily at 300+ calories per serving.
Recipe:
Rainbow Rice Krispie Treat Cake
Serving size: 1 square, cut 4 x 5
Ingredients
12 cups Rice Krispie cereal
6 Tbsp butter
8 cups miniature marshmallows
3 cubes of vanilla almond bark
Sprinkles
Food coloring
Directions
Divide ingredients into 6 sets (or however many colors you intend to do). It is easiest if you have 6 bowls of cereal and 6 bowls of marshmallows/butter
Prep a 9x13 pan by greasing with cooking spray
In a medium sauce pan, melt butter over low/med-low heat.
Add marshmallows and stir until smooth
Add food coloring—if you are building the rainbow, start with purple and work up to red. Marshmallows will mute the color, so be prepared to use more food dye than you think you need. I used 20+ drops of each color to get the correct brightness.
Once it is well blended, add the rice krispies and stir until well coated.
Place immediately in prepared pan and press to edges.
Wash pan/spoon and repeat steps 3-7 until all the colors are complete.
Top with melted almond bark and sprinkles.
Cover with saran wrap if not serving immediately.
