Here’s another slow-cooker recipe you are going to love! This is a sweet and savory chicken, paired with crispy veggies. It is a crowd-pleaser, and even my toddler likes it. It’s another super easy one—start with frozen chicken breasts, dump the rest of the ingredients in on top, set it and forget it till dinner time.
I’ll be honest, the first time I made this, I read the recipe wrong and put in a full cup of honey. It was tasty, but admittedly overly sweet—and honey is not an inexpensive ingredient either! I have since toned it back to the half cup, and that is plenty!
Vegetables are a great choice to pair with this, and you can use any particular combination of veggies that you like. Frozen mixes will work. I prefer to use fresh veggies and sauté them. It’s quick and easy (especially if you have been stocking your fridge with pre-chopped veggies), and it adds more of a crunch.
In the pictures below, I served everything separate. But honestly we mix it all up and eat it all together—more of a rice bowl type of dish. That means left-overs make a great lunch for work the next day too!
Meal:
5 oz Honey Sesame Chicken
2/3 cup rice
1 cup of mixed vegetables (peppers and snow peas)

Ingredients
2 lbs chicken breasts, frozen (approx. 4 breasts)
1 large onion, diced
2 cloves garlic
½ cup honey
¼ cup ketchup
½ cup soy sauce
2 Tbsp olive oil
¼ tsp Red Pepper Flakes
1/3 cup water
4 tsp conrstarch
Directions
Place frozen chicken breasts in the crock pot.
Dice onion and add to crock pot.
In a small bowl, combine garlic, honey, ketchup, soy sauce and oil. Add red pepper flakes if desired (can leave out and add to individual servings to accommodate non-spicy eaters).
Pour sauce over chicken, and set on low. Cook 4-6 hours.
20 minutes before serving, remove chicken breasts, shred and set aside.
Transfer majority of sauce to a small saucepan and bring to boil.
Mix cornstarch with cold water, and pour into sauce, stirring constantly.
Return chicken and sauce to crock pot, and sprinkle with sesame seeds. Serve over rice.
